Joachim Lefaure, Food Culture Technician and Geographer

A technician in oenology, geographer in food culture and specialist in taste and tasting, Joachim Lefaure obtained a Master's degree in Humanities and Social Sciences and a Master's Degree in Geography from the Université Paris-Sorbonne. He has been working with Bachelor and Master students at the Luxury Hotelschool since 2017.
“I have several methods, but when I first met the students, I offer them a quiz. This allows me to apply different methods depending on the profiles. I present tailor-made, not only at the level of the group but also at the level of each of the students, so as to leave no one behind. We all grow together during our 3 or 4 years in common at school.”
By assessing the level of general knowledge of the students, it is thus easier to fill the gaps because they will quickly be asked in the professional world about: appellations, regions, wine consumption in a particular place in the world, the date and place of the first wines being made... “Then, the more we progress in the training course, the more we will add elements that will enhance their general knowledge, their tasting skills and the abilities, in a second step, to embody their role as manager: selection, purchase, sale, highlight, staff training...”
“Today, wine is a globalised product. Wine is drunk in Hong Kong, Paris, New York, Cape Town, Bali, New Dehli... Hotel and restaurant professionals are thus confronted with new problems with a clientele with different cultures, varied eating habits, different modes of consumption...”
“Previously, someone trained in France was programmed by and for a French culture, in terms of consumption and communication, but today a professional has to deal with the world around him. This is what we want to develop at the Luxury Hotelschool: a great capacity to adapt to all these cultures and modes of consumption.”
